This is a simple and quick recipe for really gooey, fudgy brownies - perfect for a small treat or if you have an unplanned visit. I promise you, your friends, family and neighbours will love these.
The ingredients you will need are:
200g dark, good quality chocolate
100g unsalted, soft butter
3 eggs
50g flour
100g caster sugar
Melt the chocolate over a simmering water bath in a bowl. At the same time whip the eggs and caster sugar in a bowl together, until it reaches a fluffy texture. Then add the softened butter to the sugar mixture and keep mixing. While mixing add the melted chocolate and continue combining everything to a smooth texture. Lastly, fold in the flour with a spatula. Spread the mixture in a small square-shaped, slightly buttered and floured baking tin. What I love to add at this stage is frozen raspberries or any kind of chopped up nuts to give the brownies an extra twist. Bake at 180° for 15-20 minutes, make a test with a knife in the middle to check if it is baked through. Let the brownies cool down for a bit, cut them into squares and enjoy!
